They have something to teach us about thriving in the face of any adversity.  And they taste so much better once they have been frozen, yet they live to grow another day...&lt;br /&gt;&lt;br /&gt;I'm making another order from &lt;span style="font-weight: bold;"&gt;Johnny's Selected Seeds&lt;/span&gt;, in Maine, today. As Scott tells the story, he was on a bus through the Khyber Pass toward Kabul when the bus broke down near Jalalabad, in Eastern Afghanistan.  He had nothing to do for four hours while repairs were made, except watch  local bakers at work making &lt;span style="font-weight: bold;"&gt;naan&lt;/span&gt;, the local flatbread of the region.  The aromas of wood smoke and fresh-baked naan, combined with the  sweet/tart flavor of the local apricot jam on the warm bread, created an unforgettable "village food" experience!&lt;br /&gt;&lt;br /&gt;The bakery was completely outdoors-- the oven was made from a thick, horizontal plate of steel set on a long rectangular base of firebrick and adobe, with a stoking door for adding entire 6-foot logs, lengthwise.   Adobe was formed in an arcing tunnel over the steel plate, with no door at enclose the "oven" space--but obviously the oven was hot enough it did not need a door!&lt;br /&gt;&lt;br /&gt;It was January, but the workers were lightly dressed as they worked near the huge oven.  Each long naan flatbread was placed all the way in the oven on a long wooden paddle, then removed, less than two minutes later, fully baked, with a few charred spots adding to the unique whole wheat flavor....&lt;br /&gt;&lt;br /&gt;During our time in Minnesota, we made flatbread on the stovetop of our Home Comfort woodstove, but now we use a similar, simple recipe and a modern, very hot, convection oven to create a fast-baked and delicious whole-grain flatbread.&lt;br /&gt;&lt;br /&gt;&lt;span style="font-weight: bold;"&gt;Instant "Flatbread Pizza" Ideas:  (Heat oven to 400 F. and bake 12 minutes)&lt;/span&gt;&lt;br /&gt;Marinara sauce, onions, peppers, tofu and parmesan cheese.&lt;br /&gt;Hummus, diced tomatoes, Kalamata olives, oregano, and Feta cheese&lt;br /&gt;Black bean spread, salsa, and sweet corn kernels with cheddar cheese&lt;br /&gt;Vegenaise, pesto, shredded smoked salmon, and parmesan cheese&lt;br /&gt;&lt;br /&gt;&lt;span style="font-style: italic;"&gt;(Note:  We always use cheese sparingly, as a "seasoning", and suggest you do the same.)&lt;/span&gt;&lt;br /&gt;&lt;br /&gt;&lt;span style="font-weight: bold;"&gt;Other "Quick Meal" Ideas using Flatbread:&lt;/span&gt;&lt;br /&gt;Flatbread Pannini with Grilled Veggies or Tuna Salad&lt;br /&gt;Flatbread and Dal (Traditional Indian soup with Red Lentils)&lt;br /&gt;Flatbread and Chili&lt;br /&gt;Flatbread and Egg Scramble with Fresh Veggies &lt;span style="font-style: italic;"&gt;(see photo above)&lt;/span&gt;&lt;br /&gt;&lt;br /&gt;The possibilities are virtually endless, so use your imagination!  Flatbread is a staple bread in our food subscription service. float: left; cursor: pointer; width: 240px; height: 320px;" src="http://2.bp.blogspot.com/_rcUMYYEwOs0/SRsuQ_fJ-OI/AAAAAAAAADU/JHrJ4e0fDY0/s320/Basil+commercial+harvest+08+08+005.jpg" alt="" id="BLOGGER_PHOTO_ID_5267855058594822370" border="0" /&gt;&lt;/a&gt;&lt;br /&gt;Basil and Pesto--the tastes of summer!&lt;br /&gt;&lt;br /&gt;Summer of 2008 was a wonderful season in North Central Washington--just the right amount of heat, and virtually every day was a sunny day.&lt;br /&gt;&lt;br /&gt;We grew six varieties of basil this year--Italian Large Leaf, purple ruffles, Thai basil, holy basil, lemon basil, and Aftrican blue basil.&lt;br /&gt;&lt;br /&gt;The photos show our largest harvest of the Italian Large Leaf, from our plot at Solid Rock Farm, Chelan, WA.  We processed more basil into pesto this year, than in any year since we were commercial pesto producers on our large farm/food processing operation in the midwest.&lt;br /&gt;&lt;br /&gt;Now comes the cold season of late fall and winter, when we all appreciate the bright flavors of summer. The recipe is a variation from Beverly Lynn Bennett's recipe for Vanilla White Cake on her website, &lt;a href="http://www.veganchef.com/"&gt;www.veganchef.com&lt;/a&gt; ( I used part whole wheat pastry flour).&lt;br /&gt;&lt;br /&gt;The icing recipe is a variation on the Buttercream Icing recipe you can find at &lt;a href="http://wilton.com"&gt;www.wilton.com&lt;/a&gt; ( I used organic shortening and soymilk).  Wilton is the long-time purveyor of cake pans, cake decorating tools, etc.&lt;br /&gt;&lt;br /&gt;I used blueberries and pansies for decoration.  Everyone who ate this cake said it was delicious.  I tried some leftover refrigerated cake five days out and it was moist and delectable. All of a sudden, organic food, local food, and green cuisine are popular...and hey, it couldn't be more timely&lt;br /&gt;&lt;br /&gt;With the trend in Green Weddings on the upswing, we are there to create an incredible gourmet food experience to celebrate sustainability in food and relationships!  It is a pleasure to work with brides and grooms-to-be to create a unique food experience for the reception or wedding dinner.  We have two weddings on our catering calendar already, and there are room for more, with enough advance notice.&lt;br /&gt;&lt;br /&gt;As Grower/Chefs we plant the best varieties, selected from our 36 years of experience in natural agriculture.  In the early spring garden now are kale and leeks (full size and harvestable),  arugula, nappa cabbage, onions, fennel, tarragon, spearmint, spinach, lettuce, red cabbage, and a wonderful oriental 'braising greens' mix for stir fries.&lt;br /&gt;&lt;br /&gt;It has been a challenging year with many late frosts, so having the above crops in the garden which are hardy and totally frost resistant, is really comforting.  Our fruit crop is uncertain, due to late frosts, but we will know more in several weeks as we can then see the appearance of the fruits as they form and size up. It was a big hit with everyone, so here is the recipe:&lt;br /&gt;&lt;br /&gt;1 large onion, diced&lt;br /&gt;2 T. extra virgin olive oil&lt;br /&gt;4 cloves garlic, minced&lt;br /&gt;1 lb. dry brown lentils, rinsed and drained&lt;br /&gt;2 t. mild chili powder&lt;br /&gt;2 t. ground cumin&lt;br /&gt;2 t. ground coriander&lt;br /&gt;1/2 t. cinnamon&lt;br /&gt;juice of 1 1/2 lemons&lt;br /&gt;2 t. salt&lt;br /&gt;&lt;br /&gt;Place all ingredients except lemon juice in a large crockpot (6 quart) and cover with water, to about 1 1/2 inches from the top of the crock.  Cover and cook on high all day until the lentils are soft.  Add lemon juice at the end of the cooking. &lt;br /&gt;&lt;br /&gt;Store extra soup in wide-mouthed quart jars in the frig.  If you pack the soup hot into the jars, a vacuum will be created and the soup will last a long time in the frig (at least 2 weeks).  If you want to store it longer, I suggest you freeze the soup in a sturdy plastic container. &lt;br /&gt;&lt;br /&gt;You can also serve thickened soup over steamed rice for a main course. Our intuition told us that the evening would be perfect for the yearly Ancho Pepper Roast. Glasses of cabernet sauvignon were poured on the backyard patio, and we sipped the wine while the outdoor cast iron fireplace warmed to life with a fast-burning Willow log fire in its belly.&lt;br /&gt;&lt;br /&gt;Soon the burning gases of the logs were shooting out the fireplace chimney, creating an area of intense heat, just right for pepper roasting. We pierced the peppers with a long barbeque fork and roasted them until the skins bubbled and blackened. The peppers were then put in a stainless steel pan with a lid and cooled overnight. We taught how to make the natural dressings also, and the choice was Natural Sweet Onion Ranch, or Lime Vinaigrete.&lt;br /&gt;&lt;br /&gt;The whole-grain bread, made from fresh-milled flour, was delicious with the fresh garlic/olive oil/balsamic vinegar dipping sauce.&lt;br /&gt;&lt;br /&gt;Two crockpot soups completed the gourmet vegan dinner, the first being a natural mulligatawny, a vegan version of the famous British/Indian soup with celery and cauliflower, made with garbanzo broth. The second was the wonderful black bean soup with serrano chilis and garlic.&lt;br /&gt;&lt;br /&gt;Our next class in this series, Featuring savory grain dishes and curries, meets Wednesday February 1, at 6:30 pm. Reservations are required for this private event. The menu offered below will be repeated, with a few variations...&lt;strong&gt;this is a private event and reservations are required&lt;/strong&gt;.  As of Sept 15 there are still a few places open.  Class size is limited.&lt;/p&gt;&lt;p&gt;&lt;strong&gt;Fresh, tree-ripe, biologically-grown nectarines from our front yard orchard were a feature&lt;/strong&gt; &lt;/p&gt;&lt;p&gt;of The Healthy Gourmet Class last night, September 14, at our home.&lt;/p&gt;&lt;p&gt;Thanks to Bob and Bob, Valda and Stacey, Patty and Heath, and Angela and Brian, for joining us to celebrate the great flavors of simple, health-giving natural food.  &lt;/p&gt;&lt;p&gt;The menu for this private event was:&lt;/p&gt;&lt;p&gt;&lt;strong&gt;Stovetop sourdough wholewheat red onion flatbread, black bean crockpot soup, tomato/serrano/peach salsa, healing vegetable soup, broccoli sunflower seed salad, and the fresh fruit dessert directly from the suburban homestead, picked shortly before serving, the nectarine/black seedless grape dessert, with a light ginger honey lime sauce.&lt;/strong&gt;  Complemented with a Washington Chardonnay and lemon/lime sparkling water, and the demonstrations and stories surrounding the foods and the simple food prep techniques, the evening light gave way to the flickering of the tiki torches.&lt;/p&gt;&lt;p&gt;It is a bit of a challenge to be Chef and Photographer at the same time, as we realize the great photo-ops we passed by---Scott rolling out the flatbread while sharing the stories about watching the naan bakers in Jalalabad, Afghanistan, then living on naan and apricot preserves in Kabul for three days while waiting for visas for India in 1973.  Ruth's flourishes as she prepped the veggies for the healing soup, while sharing the story of the benefits of miso, drawn from the aftermath of Hiroshima....and Bob Scott's fantastic story about his lab partner who was a brewer/winemaker extraordinaire who always had various fermenting concoctions going at their dental technology lab in San Diego...&lt;/p&gt;&lt;p&gt;Ah the delights of good food, good people, a perfect, warm evening, a glass of wine, and sharing a strategy for saving money while living better.  Thanks again for your participation!  &lt;/p&gt;&lt;p&gt;The classes are going well, and we look forward to doing a "virtual tour" of The Suburban Homestead for one of our next postings.
